My phone produces frequent notifications using the default sound (which I can set), but I want to find out which apps are generating these default notification sounds. I have set different sounds for the messaging, calendar, email and alarm , and they work as expected. I have turned off almost all other app notifications in the Note 5 settings and the ones that are enabled are set for “pop up” messages. In those, there is no setting for sound. It would be great if I had a diagnostic app that listed which apps had which notification sounds assigned. At least that would help. Any ideas?

Set a distinctive ‘default’ notification sound and wait for it to happen. Then have a look at what’s running. Or, you could keep the processes/CPU usage overlay in developer options on and sit there watching it to see when it makes the sound and what comes up.
