What are the risks of leaving the battery plugged in while I swap the screen? I’d rather not pull it out if I don’t have to. If I can’t turn off the watch and there’s still power going through it will I risk damage? Thanks

Yes. you must disconnect it. In not doing so you could short the battery accidentally and it may damage the device. (or you)
