Is there a big difference between the covered early 2015 imac 5k and the most recent one, the late 2015 5k iMac? I’d be especially interested in adding another ssd to the integrated PCI ssd. Is it even possible? Is there a sata connector on the board if you don’t opt for the fusion drive? Thanks in advance Cheers Max

Apple treats them as a different model group. Here’s the specs of the newer set: iMac17,1 and here is the older: Mac15,1. I would strongly recommend you review across the series as there are quite a few differences that might be a factor if you are buying the newest version. As an example the CPU is soldered to the logic board in the newer line. Both models offer a custom Apple M.2 4 lane PCIe blade SSD which is located on the back side of the logic board (very difficult to get to). Here is the IFIXIT guide to replace it iMac Intel 27" Retina 5K Display SSD Replacement. I would recommend buying the system with the largest SSD now that you think you’ll want given the difficulty in getting to it.
